Takra
Takra is spiced buttermilk thinned with water, the traditional Ayurvedic after-meal drink, classically taken to settle and lighten digestion.

Ingredients
- 1/2 cup plain yogurt
- 1 cup water
- 1/2 tsp cumin seeds, lightly toasted and ground
- 1 small pinch rock salt
- 1 pinch ground black pepper
- Fresh coriander leaves, finely chopped
Method
- Whisk the yogurt with the water until smooth and frothy. Thinning it well is what makes it takra rather than plain yogurt.
- Toast the cumin seeds in a dry pan until fragrant, then grind them.
- Stir the ground cumin into the buttermilk.
- Add the rock salt and black pepper.
- Mix in the chopped coriander.
- Serve at room temperature in small cups after lunch.
Always diluted with water and taken in small amounts after the midday meal. A classic digestive in the Ayurvedic kitchen.
