Ginger Tea
Ginger tea is fresh ginger root simmered into a warming infusion, traditionally sipped before meals to kindle agni, the digestive fire.

Ingredients
- 1 inch fresh ginger, thinly sliced
- 3 cups water
- 1 small pinch ground cinnamon
- 1 tsp honey, to taste
- Squeeze of fresh lemon, optional
Method
- Peel and thinly slice the fresh ginger.
- Bring the water to a boil in a small pot.
- Add the ginger and cinnamon, then lower the heat.
- Simmer gently for seven to eight minutes until the water is fragrant and lightly golden.
- Strain the tea into a cup and let it cool for a minute.
- Stir in honey and a squeeze of lemon if you like, and sip it warm.
Warming and best in cooler weather or before a heavy meal. Pitta types should keep it mild and infrequent.
